Lasagna

I didn't feel good enough to run today but you bet I wore my new shoes to the grocery store!
And for the food:
Brett wanted it, so I made lasagna!

Browned some lean ground beef
Chopped up onions, zucchini, and portobellos
Added the onions and zucchini to the skillet with the beef
Then I got this genius idea to make a hole in the middle of the pan and turn the burner to single instead of dual heat so in effect it would only heat the middle part.

 Added the mushrooms in the middle with some oil (sorry bad pic)


To the beef mixture I also added some salt, pepper, chili flakes, fennel seeds, garlic powder, and chopped parsley.

Meanwhile I boiled some whole wheat lasagna noodles (only because they didn't have the no boil noodles at the commisary :( ).

And mixed up some low fat cottage cheese, low fat ricotta, and a mixture of mozzarella and smoked provolone.
Cheese! Thawed spinach and on the end - fresh parsley.
I mixed the spinach and parsley into the cheese and also added Italian seasonings (the mix they sell at the store with basil, oregano, sage, thyme, etc.), garlic salt, garlic powder, onion salt, caraway seeds, fennel seeds, and ground black and white pepper.

Then you just start with a layer of marinara sauce on the bottom of a casserole pan, then pasta, cheese, beef mixture, sauce, pasta, etc. Oh by the way, I took the easy way out and used pre-made jarred pasta sauce.

Ready for the oven (350 for 30ish min)
I always fill the dish up a little too much, oh well!

I've never made lasagna with fresh parsley before, I really think that made a difference.  Anyone have suggestions on what to do with the left over cheese mix? I made too much! I was thinking maybe some savory pancakes made with corn masa?
